Tasty Tuesday...Easiest, Yummiest Chicken Ever

Thanks so much for praying me through my Red Hot retreat weekend. In case you missed the recap (with lots of pics!) ~ you can check it out here! What an amazing weekend!! :)

Hey Friends! Welcome to Tasty Tuesday!

I'm curious...does anyone else wrestle with having a healthy meal ready for your family in the midst of full days, especially when you are "dog tired"?? I'm feeling like I've been run over by a truck today (a full-size semi!) ~ but when my family comes home they're going to want to eat dinner! What's a woman to do???

It's time I pull out my secret weapon-recipe once again...my all-time favorite, easiest, yummiest chicken dish ever!!

It's going to be a chicken taco bar at our house tonight (yes, we do have Taco Tuesday's!)

I hope to have all the "fixins" prepared in bowls in the fridge ready to pull out at supper time (lettuce, cheese, salsa, sour cream, tomatoes, taco shells, etc..). The chicken is so easy and delicious!

Chicken Tacos ~ Crockpot style

1 lb boneless, skinless chicken breasts (W. Mich friends ~ we use Miller chicken. It is GREAT!)
1 1.25 oz package taco seasoning mix
1 cup water

Spray inside of slow cooker with cooking spray. Combine chicken, taco seasoning mix, and water and mix well. Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours. Remove chicken and shred with 2 forks. Service in hard or soft tortillas and garnish with your fixins!

We have a counter in our home that serves as our Taco Bar. I bought baskets with liners (so easy and cheap!) for our Taco Night ~ plus no dishes to wash! Yippee!

The kids love Taco Tuesday's (and so do their friends)! Enjoy!!

P.S. I also need to make a "Cheesy Potato" casserole for Jake's hockey team tonight (they won their first play-off game last night! Woo Hoo!). Anyway...I've never made Cheesy Potatoes before! Anyone have a yummy recipe for some hungry hockey players??

We love taco Night - but have never used chicken. This sounds like such an easy recipe! thanks for sharing!

made these for Valentine's weekend and were incredible! I will never buy Betty again!

AuGratin Potatoes (food.com #29286)

3 lbs. red or other potatoes (I used Yukon Rose-red outside, yellow inside)

5 T. butter
6 T. flour
4 c. milk

2 garlic cloves, crushed (I pressed mine)
2 t. salt
1 dash cayenne pepper
2 c. cheddar cheese, shredded
1/3 c. parmesan cheese, grated

Preheat oven to 350. Boil potatoes until just tender, 20-25 minutes; drain. When cool enough to handle, peel and slice into 1/2 inch pieces. Put potatoes in 9x13 baking dish.

In a large saucepan, melt butter over med. heat. Add flour; stir while cooking, 1-2 minutes. Whisk in milk and add garlic. Season with salt and cayenne pepper. Stir in cheddar cheese and all but 2 T. parmesan cheese. Gently pour sauce over potatoes and stir to mix evenly. Sprinkle remaining parmesan over top.

Bake 45 minutes or until potatoes are tender and dish is bubbling and lightly browned on top. Let stand 5 minutes before serving.

I PROMISE this will be worth every second it takes to prepare! :-)

Hey Cindy!
Okay, here is one we do regularly, and you can even throw it all together in a crock pot and let it just cook (we do this when we are camping!)
2lbs. frozen hash brown potatoes (we like the chunk ones-not the shredded ones)
1/2 C. butter (melted)
2 cans cream chix (or mushroom) soup
1/2 t (each) salt and pepper
16oz. sour cream
12oz cheddar cheese (shredded)
8oz mozz. cheese (shredded)
1/2 can (of the large) French Fried onions

Mix all ingred except reserve 1/2 of the FF onions. Put in a greased 9x13 pan. bake at 350 for 1- 1 1/2 hours. Sprinkle the other 1/2 of the FF onions on last 5-10 min. of baking.
Extra toppings for them: 1 1/2 C. crushed crackers, chips, or corn flakes mixed with 3/4 C melted butter--spread over top before baking.
If you put in a crock pot- we add it all together, and turn it on low about mid morning-making sure to stir it pretty reg. then by dinner time-it is good to go!

Taco Tuesday sounds like a great idea! Gotta love those crockpots. Haven't tried this one yet, but definitely looking forward to it! Thanks for sharing!

Use the awesome Crock Pot liners and then you never have to wash the crock pot again.

Tonight we are having soup beans, stewed cabbage, and cornbread. I'll add a bit of my homemade pepper relish to the beans and some sweet onion and we will be eating good.
