Tasty Tuesday...Easiest, Yummiest Chicken Ever ~ plus GIVEAWAY!

Hey Friends! Welcome to Tasty Tuesday! I'm curious...does anyone else wrestle with having a healthy meal ready for your family in the midst of full, hot summer days?? Who wants to spend hours in the kitchen when we could be out playing?? What's a busy woman to do??

Well here is my all-time favorite, easiest, yummiest chicken dish ever!!

I like to make a chicken taco bar (yes, we do have Taco Tuesday's!)

I have all the "fixins" prepared in bowls in the fridge ready to pull out at supper time (lettuce, cheese, salsa, sour cream, tomatoes, taco shells, etc..). The chicken is so easy and delicious!

Chicken Tacos ~ Crockpot style

1 lb boneless, skinless chicken breasts
1 1.25 oz package taco seasoning mix
1 cup water

Spray inside of slow cooker with cooking spray. Combine chicken, taco seasoning mix, and water and mix well. Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours. Remove chicken and shred with 2 forks. Service in hard or soft tortillas and garnish with your fixins!

We have a counter in our home that serves as our Taco Bar. I bought baskets with liners (so easy and cheap!) for our Taco Night! The kids love it (and so do their friends)! Enjoy!!

And speaking of delicious crockpot meals...a few weeks ago I had the chance to meet Beth Bergen, otherwise known as the Queen of Crockpot Cooking. What a sweetie! We met at the recent Speak Up! Speaker's Conference I attended. Here's a picture of me and Beth (with her crockpot cookbook!)

I would love to win this book because I am going to be teaching FULL time next year and I am worried about having healthy prepared meals for my family when I get home. So- a new crock pot book would be great and start me out on the right stomach in September. Thanks for sharing Cindy!

My grill was sizzlin' Sparklin' Cindy! My husband and I got a brand new gas grill in May to celebrate 12 "hot" years together! (We did have a fire in the church at our wedding, but that is another story :) This Tuesday night was celebrated with steaks, shrimp, corn on the cob, and salad. Good bye charcoal! Hello sizzlin' summer suppers!

My crockpot is one of my "kitchen best friends," so I'm always on the lookout for new recipes so that things don't get boring. Our son and his friends are entering their teen years and these boys are ALWAYS hungry, so having an open buffet bar just like you do with easy crockpot recipes is just what I need.

I'm running out of crockpot recipes to make so I would like to have a new cookbook real soon, :)
It's like my favorite dish to make in the world. I have a 9-year old girl, 6-year old twin boys and a 3-year old princess. Imagine how our daily routine goes every single day. So crockpot recipes are life saver for me to keep all other things in place. :) Assemble it, plug it, then leave to attend to my other million things to do. :)

Having 4 kids, I often find I am searching for new recipes that they will eat. I hate to bother to cook if no one will try my food. :) And of course, I don;t have much time to stand around, so I love to use my crock pot. I don't have very many recipes, so I'd love to have some new ones. Thanks for hosting the giveaway! My kids love Mexican, so I will try this for sure!

I want to win it because I truly love my crockpot and use it often and year 'round. I even take it on vacation with us. (Nothing better than coming back to our beach house after a day in the sun and sand to find a hot and tasty meal all prepared!)
